Doctor Optic Standard Bitter

Upside Brown Ale
This Northern English Brown meets American Brown with aromas of spiced nuts and chocolate will turn that frown Upside Brown. Try it on Nitro to bring out a more intense chocolate/cookie aroma.
Malts: Crisp Maris Otter, Crisp Pale Chocolate, Crisp Crystal 15L, Crisp Brown, and Crisp Chocolate.
Hops: Magnum; finished with Chinook, Mt Hood, and Experimental Hop 04190.

Fallen Sky Juniper Rye
The beer for which the brewery was named: Imagine an orange grove blossoming in the middle of a juniper forest leading into warm fresh baked rye bread flavor and a refreshingly dry finish. This beer is a perfect companion when watching the sky fall.
Malts: Weyermann Pilsner, Weyermann Rye, Simpson Crystal Rye, MFB Caramel Munich 40L.
Hops: Horizon; finished with Mt Hood, East Kent Golding, and Willamette

Summer Sprinkle Dinkel Beer
A Bavarian Weizen-inspired Belgian-style ale made with Spelt. Spelt is an heirloom wheat variety that can be traced back to 5000 BC and became the staple grain of peasants from the Bronze Age to medieval times. Aromas of clove, apple and pear yield to a subtle nuttiness and sweet banana bread finish.
Malts: Schill Cologne Malt, Weyermann Pilsner, Best Malz Spelt, Weyermann Acidulated.
Hops: Styrian Aurora; finished with Organic German Tettnang and Meridian
Vitals: OG 1.038 21 IBU 3.5% Alc
Bare Hands Bitter
This English Pale ale is holding a firm bitterness with grip of NW hop flavor; because you can do so many things with your own bare hands. Get a hold of it!
Malts: Crisp Pale, Simpson Caramalt, Torrified Wheat, Crisp Roasted Barley.
Hops: Magnum; finished with Centennial, East Kent Golding, and US Golding
Vitals: OG 1.047 40 IBU 4.5% Alc
Sparked Hue Weizen (available 5-10-2012)
Inspired by the intrigue of the French/Belgian farmhouse style and the famous wheat beers of Bavaria sparked the storm that gave way to this unique offering. This hop less ale is made with a healthy amount of malted wheat and a touch of malted oats, but the character of the beer comes from yarrow, one of the most widely used herbs in the world that also has historical use in both ales and gruit. It is balanced by the sweetness of wheat malt and a gentle tartness from hibiscus flowers. There’s only 20 gallons of the batch, so grab a taste while you can!
Malts: Weyermann Pilsner, Weyermann Dark Wheat, T&F Oat Malt, Weyermann CaraBohemian.
Hops: None
Extras: Organic Yarrow and Organic Hibiscus Flowers (Mt Rose Herbs)

*Please note that this beer contains yarrow (which is a member of the sunflower family). Yarrow is known to have a mild stimulant effect. Drinking a yarrow beer is a unique and unfamiliar experience for those accustomed to predominantly hoppy beers, offering a different bitterness and experience than hopped beers.
Trouble Every Day ISA (India Session Ale)
So you like hops do ya? Made with the same amount of hops as our IPA but with less alcohol, this is a hop delivery vehicle when you still need to drive home. There’s no way to delay that trouble coming every day.
Malts: Great Western Oregon Select and Schill Cologne Malt.
Hops: Simcoe; finished with Centennial and Meridian

Cloud Break Unfiltered Munich Helles
Right at home in a Traditional German Beer Hall, Munich Helles is the most prominent lager brewed in Bavaria, enjoyed year round. Most lager is filtered, so enjoy the fresh flavor and elegant finish of our first unfiltered lager to make you forgot the clouds will ever come back.

Oranjekoorts Belgian Pale Ale
Do you have Orange Fever? Named after a phenomenon in the Netherlands revolving around Queen’s Day and national sporting events, this Belgian Pale is orange in color and aroma. Subtly spiced with intense malt flavor, this would be great paired with a seasonal salad or cheese plate.
Malts: Weyermann Pilsner, Weyermann Abbey, Weyermann CaraBelge, T&F Oat Malt.
Hops: Czech Premiant; finished with Organic German Tradition, Styrian Golding, Willamette.
Extras: Organic Orange Peel, Grains of Paradise, Organic Green Peppercorns (Mt Rose Herbs)

Hop Drop IPA (available 5-10-2012)
A classic NW IPA, hops in front, hops in the back, just don’t blame us for what happens in-between.
Malts: GW Organic Two Row, MFB Special Aromatic.
Hops: Bravo and Magnum; finished with Centennial, Chinook, US Goldings, Falconer’s Flight and HBC 342.
Vitals: OG 1.058 80 IBU 7% Alc
